Rolling Dice

I am very new to objective c and cocoa touch, I am still reading the books.
I just wanted to ask if anyone could explain to me how rolling dice would work.
The dice rolling, would that be one image or multiple images.
How it rolls is confusing me.

It seems to me that developing this in opengl with simple cube models would be the most effective.
